About the Steel:
The Core Steel of this blade comes from Hong Kong, labelled as 10Cr15CoMoV. I tested this against various Japanese, German, and Australian steels, and found the hardness and edge to be equal or better in nearly every case. There are then 33 layers of 316/316L stainless steel that support the core, protecting it from staining, chipping, or warping. This blade has also passed the German LFGB food contact test.
